Until now, our products have always emerged in the Fall. That's part of the reason why we're so excited to offer incredible Ontario asparagus! Asparagus greets us in the late Spring and can be pickled and shelf-ready by early Summer.
A New Recipe
We've always wanted to offer asparagus, but also wanted to make sure we got the recipe just right. This is why we are so excited to finally offer pickled asparagus with our own spice blend - our first Summer product (timely for caesars - are we right or are we right?) We found the best farm, and worked on the best spice blend, and well, we're pretty happy about how it all turned out.
Keeping it Local
As part of our commitment to keeping it local, we at Hockley Pickling Co. fill our jars with local ingredients. The asparagus hails from the farms of southern Ontario, and that is as good as it can get for a pickle. We do our canning once per year when the season is at its peak, and then we close up the canning shop for the year and sell what we have on hand. When we are sold out (which happened by Christmas last year), we are sold out until the next year’s canning session.
